So I wanna listen to some Frank Zappa. I really like what little I have heard of him so far, but I've always been intimidated by his huge repertoire. So if you could tell me where to start and what's easy to listen to for the Zappa beginner, I'd be really grateful.

You can't go wrong with Joe's Garage. Good for someone who's just getting into Zappa, as well.
Apostrophe ('), Freak Out!, We're Only in it for the Money, Hot Rats, Jazz from Hell and Yellow Shark are also good starting points.
If you like live music, check out Roxy & Elsewhere, Zappa in New York and the You Can't Do That on Stage Anymore series.
And if you decide you enjoy Zappa, I recommend looking into Captain Beefheart as well.

I recently got into Zappa myself. I only have Sheik Yerbouti and We're Only In It For the Money, the latter which I listen to QUITE often because it is amazing.

I can't help but second Apostrophe (') and Zappa in New York. The former is a great starting point and the second is one of the best live albums I've ever heard.

Not a bad idea.
If you're going to start off with a compilation, I suggest going for Strictly Commercial.
