Im trying to get my 360 video and audio onto my laptop using an HDMI port from both sides. Now, I can do this with the tv i have (HDMI to HDMI via cable) but I cant do it with the laptop in the same way, which is HD ready and theoretically should work the same way as the TV.
I've been told it's because the HDMI ports on both laptop and xbox 360 are output (seeing as it plugs directly into the graphics card on both). If so, is there any way short of physically changing shit (and 95% likely that i'll break it) of making the output, input?
Third party programs for this kinda cack are welcome too.

I don't think any kind of software will change an output port to an input port. I also highly doubt you'll just be able to switch the output port with an input port, at least not without it being silly complicated.
Just go back to playing on your TV, or wait for a good sale on smaller hdtvs. Black Friday is right around the corner.

Long answer short: You aren't going to be able to do it right now unless you're an electrical engineer and have a lot of free time. The only hope you have in the future is an external video card for your laptop which supports HDMI, something that isn't going to happen for a while because of how small the demand for such a product is.
You could use the current generation of external and an HDMI to DVI connector but you won't get sound since DVI doesn't carry audio signal. Without a picture of the video input/output of your laptop this is where my answer ends.

Anyone? Better answers? C'mon it took me like five minutes for my constructive reply and it was based solely off my personal knowledge and three minutes on google. :(

That's like asking if it's possible to turn an audio-out into a line-in. Can't be done since the feed is built to give/receive. Radiance has the same answer I would have given, and externals are too expensive to be worthwhile IMO.
Mittens, you should really post these questions at notebookreview forums, I've never had a single issue unsolved by those guys :-) otherwise, we might be leaving out better answers unless Random or Riinuka happen to come across this post. Heck, Random might even build something for you for a good price...
